Zinfandel is a California grape that is genetically linked to the Italian grape Primitivo. Both grapes are incredibly delicious and dynamic in their red wine form. Some Zinfandels can be spicy, chocolatey, smokey and fruity while others can be soft and subtle like a Pinot Noir. Due to the hot climate in California some Zinfandels can have a very high alcohol content that can be upwards of 16%. These factors make this wine great for pairing with our dark chocolate.
We have selected our 72% Cocoa which brings forward espresso on the back palate and bright cherry on the front. The chocolate has a lovely soft and creamy texture that accents the spice, fruit and coffee notes in this pairing.
